Today I am hosting the Sunday Funday bloggers. I invited them: "October 4th is National Taco Day. Share your favorite take on a taco. Crunchy. Soft. Vegetarian. Meat. Or whatever you like with your tacos: salsas, side dishes, go wild!"
Stacy of Food Lust People Love, Sue of Palatable Pastime, Rebekah of Making Miracles, and Wendy of A Day in the Life on the Farm coordinate this low-stress group; we only participate when we are inspired. I already mentioned that I am hosting.

Crispy Grilled Shrimp Tacos
So, one evening while Jake was out for his book group, I decided to make a small batch of crispy grilled shrimp tacos. Oh, and just a point of clarification: the shrimp are not crispy as in they are not fried. I used crunchy blue corn taco shells that I bought at the store.
Ingredients
Spice Blend
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon garlic powder
pinch of cayenne to taste
Tacos
1/2 pound shrimp, peeled and deveined
drizzle of oil
Also needed: grill pan
for serving: crunchy taco shells, pico de gallo, guacamole, slaw (I made a Brussels sprouts slaw), crumbled cotija, and fresh lime wedges
Procedure
Spice Blend
Blend the spices together in a small mixing bowl and set aside.
Tacos
Massage the spices into the shrimp and set aside Add to the grill pan. Add the shrimp to the hot pan and sauté for approximately 5 minutes, flipping occasionally, until the shrimp are cooked through.
For Serving
Layer in whatever you want in your tacos. I did - from bottom to top - guac, slaw, pico de gallo, cotja, then shrimp. Enjoy!

The group will be back next weekend with fun Halloween recipes. Stay tuned! It's one of my favorite food holidays. I can't wait to share some sweet and spooky treats.
Love the tortilla color and that shrimp on top... so yum!!
Love those blue corn tortilla - looks like a great taco
Love this different filling for tacos instead of chicken or pork. Would love to make this for my daughter.
Hubby is a huge fan of shrimps. The shrimp filling is so easy to make. Perhaps I should surprise him with shrimp tacos.
I like the way you build a taco! Thanks for the great theme.
