Crispy Grilled Shrimp Tacos #SundayFunday

Let's TACO-bout It...


Crispy Grilled Shrimp Tacos


So, one evening while Jake was out for his book group, I decided to make a small batch of crispy grilled shrimp tacos. Oh, and just a point of clarification: the shrimp are not crispy as in they are not fried. I used crunchy blue corn taco shells that I bought at the store.



Ingredients

Spice Blend

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon garlic powder

  • pinch of cayenne to taste

Tacos

  • 1/2 pound shrimp, peeled and deveined

  • drizzle of oil

  • Also needed: grill pan

  • for serving: crunchy taco shells, pico de gallo, guacamole, slaw (I made a Brussels sprouts slaw), crumbled cotija, and fresh lime wedges


Procedure


Spice Blend

Blend the spices together in a small mixing bowl and set aside.


Tacos

Massage the spices into the shrimp and set aside Add to the grill pan. Add the shrimp to the hot pan and sauté for approximately 5 minutes, flipping occasionally, until the shrimp are cooked through.


For Serving

Layer in whatever you want in your tacos. I did - from bottom to top - guac, slaw, pico de gallo, cotja, then shrimp. Enjoy!

Hubby is a huge fan of shrimps. The shrimp filling is so easy to make. Perhaps I should surprise him with shrimp tacos.
