I don't even know where I first saw this idea, but I decided to make a version of Champagne Jell-O Shots for New Year's Eve. I swapped Prosecco for Champagne, vodka for gin, and maple syrup for simple sugar syrup. This was fun, but never having had Jell-O shots, I have no idea if this is what they were supposed to end up as.
They were part of our dessert course along with Sugar Cookie Snowmen with a Candy Heart and Chocolate Rice Krispies Trees.
Ingredients
1 cup Prosecco or other sparkling wine
1/2 cup vodka
1/4 cup freshly squeezed lemon juice
1/4 cup maple syrup
2 envelopes unflavored gelatin
sprinkles or edible glitter for garnish
Procedure
In a medium saucepan, combine fresh lemon juice and maple syrup. Mix well. Sprinkle gelatin over the syrup mixture. Allow the gelatin to soak for 2 minutes. Gently heat over low heat, stirring continuously until the gelatin is completely dissolved, approximately 3 to 4 minutes. Do not let it boil.
Remove the saucepan from the heat, and add the vodka and Prosecco, stirring well to blend.
Pour the Jell-O mixture into a loaf pan or small glass dish. Chill in the refrigerator until the gelatin is fully set and firm. This typically takes a few hours or overnight.
Once set, carefully invert and remove firm gelatin onto parchment paper. Slice into squares or rectangles and garnish with sprinkles or edible glitter. Cheers!
